Improved O2 level management, revamped procedures, and increased confidence in product quality

How Carib Brewery USA ensures consistent product quality and stable shelf life

Case study Florida Beer Company

Carib Brewery USA, formerly known as Florida Beer Company, has long been a pioneer in quality-driven brewing. Back in 2014, during a major expansion into a new 60,000-square-foot facility, the brewery made an investment in quality control. Previously, the brewery only measured CO₂ levels. But then-Director of Brewery Operations Luke Erdody wanted more: consistent, reliable quality in every bottle.

That’s when Carib Brewery USA turned to Pentair for its versatile CO₂/O₂ Gehaltemeter, the Haffmans c-DGM.

Within just two days of using the c-DGM, the team discovered elevated oxygen levels due to insufficient CO₂ purging. This insight led to a complete overhaul of their transfer process—from fermentation vessel to bright beer tank.

“Given that we are a regional craft brewer and our beer is moving further away from the brewery, it is important we have confidence that all of our products have a good, stable shelf life.”

Luke Erdody, then-Director of Operations at Florida Beer Company

The CO₂/O₂ Gehaltemeter, Haffmans c-DGM, is a multifunctional device designed to measure:

  • Dissolved CO₂ and dissolved O₂ in liquids.
  • O₂ content in gases.
  • CO₂ purity in gases.
  • Total Package Oxygen (TPO) in beverage containers.

Its robust and portable design makes it ideal for use both in the laboratory and directly in the production environment.

Today, Carib Brewery tracks both CO₂ and O₂ levels all the way to the filler, achieving O₂ levels as low as 0–15 ppb in bottled products.

For laboratory use, the Haffmans c-DGM is paired with the Haffmans ISD 2.0, a sampling device that can take samples from a variety of beverage package types such as bottles and cans.

Together, the system works like this:

  • When the beverage package is pierced, the built-in valve opens, allowing carbon dioxide (CO₂) or nitrogen (N₂) from an external gas supply to enter the package’s headspace. The beverage is then forced out and into the sampling line of the quality control instrument.
  • The sample is directed to the c-DGM, which then analyzes CO₂ and O₂ levels with high precision.

With Haffmans’ solution, Carib Brewery not only improved its product quality but also empowered its team with better tools and data. The result? A more efficient, confident, and quality-driven brewery.

“We are also extremely pleased with the repeatability of our results.”

Luke Erdody, then-Director of Operations at Florida Beer Company
